Mount Benson Estate Sauvignon Blanc 2022

This Sauvignon Blanc wine was produced from lush ripe Sauvignon Blanc grapes, picked late evening and rested overnight in grape bins for extra skins contact, in the morning gently pressing to extract the full flavours. The resultant juice decanted to tank, except a small portion placed in French Oak, fermentation with specialist yeast followed, on completion allowed to rest on lees for over 5 weeks, before racking and stabilising. This wine is vegan friendly thanks to a new pea protein based fining agent. Flavours of tropical fruits, green gauge plum (Heritage Fruit), honey dew melon, lemon pith and lime. Good length with some flavour resting on the back palette. Served chilled with a range of canapes (crackers with slices of avocado, tomato, and topped with brie my favourite), mains of seafood (barramundi, lobster, and abalone) and platters of meat, nuts and cheese.
