Grown by Alan Dean on his Deanery Vineyard in Balhannah, Adelaide Hills. The ferment comprises 30% whole bunch and is pumped over 3 times a day during ferment. Pressed off skins after 12 days to French oak of which 30% is new. Remains in oak for 10 months prior to bottling.
